My Four Favorite Veggies (Plus a Confession)

Yep, I have a confession: I'm not the best vegetable eater.
I always share this with my coaching clients because I believe in keeping it real. Many people worry they can't achieve their health goals if they're not consuming a ton of vegetables. But guess what? You can still make progress, even if you're selective about your veggies.
That said, I do have a few favorites that I enjoy regularly. Let's dive in and explore why they're great choices:
Broccoli (Cooked or Raw)
Broccoli is a versatile veggie that I enjoy both cooked and raw. It's packed with essential nutrients like vitamin C, vitamin K, and fiber. You can steam it, roast it, or add it to a salad — so many choices! No matter how you consume it, broccoli is a powerhouse that supports overall health.
Cauliflower (Raw)
Cauliflower is another favorite, especially when raw. It's a low-carb option that's rich in vitamin C and fiber. I love adding it to veggie trays or pairing it with a tasty dip for a crunchy snack.
Green Beans
While technically a legume, green beans are often treated as a vegetable in the culinary world. They're a good source of vitamins A, C, and K, as well as fiber. Try them steamed or sautéed with a bit of garlic and olive oil.
Spinach (Raw)
Spinach is my go-to leafy green, especially in its raw form. It's loaded with iron, magnesium, and vitamins A and C. Try tossing it into salads or blending it into smoothies for an extra nutrient boost.
Keeping It Real
I share my veggie preferences not only to give you some recommendations with which to work, but also to highlight that you don't need to love every vegetable to maintain a healthy lifestyle. It's about finding what works for you and incorporating those choices consistently. Remember, progress over perfection!
Embracing your personal preferences and being honest about your habits is key to sustainable health. Don't stress about not loving every vegetable—focus on the ones you do enjoy and find creative ways to include them in your meals.
