Ok, so their not potatoes, but a yummy alternative. Switch zucchini with any summer squash.
Ingredients:
4 sprays cooking spray
1tsp Italian seasoning
1 1/2 Tbl all-purpose flour
3/4 tsp salt
1/4 cup Panko crumbs
2 medium zucchini (uncooked)
2 large egg whites – whipped until frothy
Instructions:
Preheat oven to 425. Coat a baking sheet with cooking spray. In a small bowl mix together Italian seasoning, flour and salt. Put Panko crumbs in another bowl
Slice zucchini in half lengthwise. And then each half into 2 pieces width wise. Slice each chunk into 4 fries. Dredge each fry in flour, dip in egg white then dredge in Panko crumbs. Place on baking sheet and repeat with rest. Spray liberally with cooking spray.
Roast, turning once, until desired crispness – about 12 minutes.
