Frozen Yogurt Bark with fruit

Healthy, easy to make, and kids love this!



INGREDIENTS:

  • 1 (32 oz.) container nonfat plain or Greek yogurt-

  • 1 Tbsp pure vanilla extract

  • 3 cups fruit or berries, cut into bit size pieces

  • 1 Tbsp white granulated sugar (our substitute any type of sweetener

  • 2 Tbsp sweetened coconut flakes-optional

DIRECTIONS:

  1. In a large mixing bowl combine yogurt, vanilla extract, and sugar sweetener together. Stir until well combined. Fold in 1 and 1/2 cups bite size fruit pieces.

  2. Line a baking tray with parchment paper and pour the yogurt mixture on top. Spread evenly to approx 1/2 inch thick.

  3. Sprinkle the top with remaining fruit pieces, coconut flakes, and any other desired toppings.

  4. Place in the freezer for 3 hours or until it is completely frozen.

  5. Remove from the freezer. Use a pizza cutter or your hands to break or cut into pieces.

  6. Leftovers can be stored in an air tight container in the freezer for up to 2 months.

  7. Makes 7 one cup servings
